This hearty Winter soup will take you maybe 20 minutes to make but, will taste like you slaved all day!
Large heavy bottomed soup pot, medium high heat:
1 tablespoon, Extra virgin olive oil
2 medium, Leeks, light green and white parts only, chopped
3 tablespoons, Tamari*
2 tablespoons, Mirin*
6 baby Potatoes (I like to use 3 red, 3 yellow), dices
3 large Carrots, diced
1/2 green Cabbage, diced
2 stalks, Celery, diced
1 litre, Vegetable stock
1 teaspoon Sea salt or Herbamare*
1 cup Peas or corn, fresh or frozen
Fresh ground pepper to taste
Dice all vegetables to desired bite size. Add oil, leeks, tamari and mirin to your pot and simmer until soft, approximately 5 minutes.
Add potatoes, carrots, cabbage, celery, sea salt and pepper, stir to combine. Add stock. Should come to just below the vegetable line, if not add some water. Bring to boil.
Reduce and simmer till vegetables are just tender, approximately 20 minutes. Remove from heat and add peas or corn.
Adjust taste with sea salt and pepper.
