So easy to make its kinda unbelievable that you can pay up to $8 for a jar of organic all fruit sugar-free jam in store. Pick your favourite fruit, fresh or frozen (I usually do mixed berries) and, add a little stevia for sweetness. If Stevia isn’t your thing you can use any alternative sweetener you prefer: agave, honey, maple or sugar if you must.
2 cups fruit of your choice
2 tablespoons Arrowroot Powder
2 tablespoons Lemon Juice
Stevia or sweetener to taste
Simmer fruit uncovered for approximately 10 minutes, it will release juices and then begin to reduce, add Arrowroot Powder and stir well. Jam will begin to thicken, add lemon juice and sweetener to taste.
Remove from heat, let stand for a minute or two and transfer to a jar. Keep for up to two weeks in the fridge.
